Homemade Pineapple Upside Down Cake

In this recipe I will show you how to make a delicious pineapple upside down cake from scratch. The result is a moist and delicious cake that the whole family will love!

When preparing the topping for a pineapple upside-down cake, most cooks leave the sliced ​​pineapple and place 6 or 7 of those slices on the cake (usually with a Cherry inside each one), but this time I decided to do it a little differently. I cut the pineapples into small pieces and arranged them so that they covered the entire surface of the cake. In this way, each slice of cake is covered equally with pineapple, and so does easier to cut and dick in.

Inverted Pineapple Cake in Mexico

Pineapple upside-down cake is popular in many Latin American countries, including Mexico. While some cooks make this pineapple cake at home, it is also commonly sold sliced ​​in neighborhood bakeries throughout Mexico.

What is the upside down cake method?

The inverted cake method consists of placing fruit at the bottom of the mold before adding the dough, and once the cake is baked, it is flip the cake above to show the bottom which is now on top. Generally, sugar is added to the fruit topping so that it acquires a beautiful candy color once baked. There are several types of inverted cakes that use different types of fruit, but pineapple is one of the most popular.

Ingredients for a Pineapple Upside Down Cake Recipe

While it's very common (and also convenient) to make this cake with commercial cake mix (such as yellow cake mix), it's also very easy to make with ingredients many of you already have at home. Many recipes for this cake use oil along with yogurt or sour cream in the batter, which gives the cake a sweet and tart flavor.

For this recipe, I am using yogurt and Mazola® Corn Oil. Mazola® Corn Oil has a neutral flavor, so it will not affect the flavor of the cake. It's also a very versatile option making it great for all types of cooking, from grilling and sautéing to baking!

Can I use fresh pineapple for this recipe?

If you have a fresh pineapple that is already ripe and you want to put it to good use, then this is the perfect recipe for you. Simply peel the pineapple, slice it, and then cut it into small pieces. A substitute canned pineapple juice in this recipe just use water instead.

Can pineapple upside down cake be made ahead of time?

This cake can be made and baked a day in advance and stored in the fridge, just be sure to store in a plastic container or alternatively you can cover loosely with plastic wrap.

Notes:

  • If you don't have brown sugar, you can use light brown sugar. It will still caramelize the pineapple, but it won't be as dark in color.
  • You can substitute yogurt for sour cream in case you don't have plain yogurt.
  • If you wish, you can add 1 tablespoon of vanilla extract to cake mix.
  • Some people like to top their pineapple cake with maraschino cherries in the center of each of the pineapple rings, but since we will be cutting the pineapple into chunks, the entire cake will be covered with only the pineapple.
  • Should flip the cake as soon as possible after removing it from the oven, but if you want you can also wait a few minutes before turning it over.
  • There are several recipes for pineapple upside-down cakes that use a cast iron skillet, but this recipe uses a traditional round cake pan.
  • Some people like to serve this cake with vanilla ice cream golden whipped cream, but still tastes delicious on its own.

How to make pineapple upside down cake

Ingredients:

  • 2 tablespoons melted salted butter
  • ½ cup of brown sugar
  • 1 can pineapple slices, chopped and drained (20 ounces)
  • 2 cups all-purpose flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon salt
  • ¾ cup of white sugar
  • Whole eggs 3
  • ½ cup pineapple juice (from canned pineapple)
  • ½ cup of Mazola® Corn Oil
  • 1 cup of plain yogurt

Instructions:

  • preheat your oven at 350ºF (180ºC)
  • Spread the melted butter around inside of 9-inch round baking pan. Sprinkle brown sugar all over the bottom of the pan, and then arrange the pineapple chunks so they cover the entire base of the pan/baking pan. Set aside.
  • Process for making pineapple upside-down cake

  • In a medium bowl, mix dry ingredients: the all-purpose flour, baking powder, salt and sugar. Set aside.
  • beat the eggs in a large bowl, then add the Mazola® Corn Oil and mix well. After this, add the yogurt and pineapple juice. Keep mixing until everything is well combined. For these steps, you can use a whisk, electric hand mixer, or stand mixer fitted with a paddle attachment.

  • As you continue mixing, little by little begin to integrate dry ingredients (flour mixture from step 3) into wet mixture. Working in stages, continue mixing until everything is well incorporated and a smooth cake batter is formed. Be sure to scrape down the sides of the bowl with a spatula to collect all of the batter.
