Hi, I come back to this with another viral TikTok recipe. I know, I know, TikTok is about to be banned, but the viral recipes won't stop and I'm here because the super fluffy cloud bread is so wavy and cute.

Plus, those are just three ingredients! I mean, I loved the dalgona coffee and the pancake cereal, so maybe there's something about this TikTok food?

After watching several people rip and smash their cloud buns, I only had to make a few.

What is cloud bread?

If you're on TikTok and looked under #cloudbread, you've probably seen the fluffiest, most impossible giant breadcrumbs you've ever seen. All you need to make it are egg whites, sugar, and cornstarch. Cloud bread is essentially a lightly baked meringue with some rebranding.

If you're not sure what a meringue is: it's a type of dessert made with beaten egg whites and sugar. Sometimes a binder (in this case, cornstarch) is added to give it a little more structure. Meringues taste like marshmallow when baked lightly and light and crisp when baked and dried longer. If you've had pavlova or lemon meringue cake or macaron, you've had meringue and, by extension, cloud bread.

But wait, isn't this cloud bread keto?

There is another kind of cloud bread floating around the internet: the keto kind. Keto Cloudbread is also made with egg whites, but since you can't have keto sugar, there is no sugar or cornstarch. Keto Cloud Bread is used as a substitute for regular sliced ​​bread.

Ingredients for cloud bread

  • Egg whites. Egg whites are what give your bread fluffy and bulk cloudy. If you're going to separate the egg whites yourself, make sure you don't put the yolks in the whites or they won't beat. Eggs are best separated while cold, but will beat better at room temperature. You can also buy egg whites in a cardboard box at the store, which I did. You will need 3 large egg whites or about 6 tablespoons of egg whites in a cardboard box.
  • Sugar. Just use regular white sugar. The sugar is what will stabilize the egg whites and let them swell even more. Sugar will also make your bread cloud a little sweet.
  • Cornstarch. You only need a little bit of the cornstarch in your cloud bread, to help soak up any extra liquid in your meringue. The cornstarch also helps your meringue shine.
  • Food coloring. This is optional, if you want your clouds to be colorful.

How to bake cloud bread

  1. Beat the egg whites. Add your egg whites to a very clean, fat-free bowl. Begin to beat the whites over medium-low heat, until they are foamy and pale.
  2. Add the sugar. Add the sugar, little by little, until the sugar dissolves and the whites begin to foam.
  3. Add the cornstarch. I like to sift the cornstarch so there are no lumps. Keep beating until the egg whites turn into a thick, glossy meringue that has a peak. The egg whites are ready when you lift the mixer out of the bowl and they hold one tip and look smooth and creamy like shaving cream. If you tilt the bowl, the egg whites should not slip. Be careful not to spank too much!
  4. Shape the cloud. Using a rubber spatula, scoop out the meringue and cloud into a parchment paper lined baking sheet.
  5. Cook. Bake in the oven until golden brown and cooked through.

Tricks and tricks

  • Make sure your egg white shake equipment is perfectly clean and free from fat or oil or your egg whites are not ready.
  • Similarly, make sure there are no egg yolks in the whites.
  • Separate the eggs when cool, but beat with them at room temperature.
  • Don't add all the sugar at the same time. Your meringue will be smoother if you add it gradually, 1 tablespoon at a time.
  • Don't hit too much! If your meringue starts to look grainy or very wet, that means your egg whites have been beaten too much and your cloud bread won't be fluffy.

What does cloud bread taste like?

To be fair, this cloud bread is more aesthetic than taste. Maybe like TikTok? It's wonderfully chewy and fluffy with little air bubbles and very fluffy and satisfying, but not the most delicious. It is light and airy and reminiscent of a marshmallow. It tastes a bit like the texture of angel food cake, but not the flavor.

Do I need a stand mixer to make cloud bread?

Technically, you don't need a stand mixer. You can prepare them with a regular mixer or a hand mixer. But it will REALLY take a lot of time and a lot of arm muscle. You can do it!

Why is my cloud bread crumpled?

This is just the nature of cloud bread! Since it is not a cake with a lot of flour to stabilize it, it crumples as it cools, like a souffle. Better to enjoy it while it's still a bit warm 🙂
