How to make strawberry paste

Ingredients

200 g linguine or steak or spaghetti
100 g strawberries not very ripe
1 shallot
50 ml of cream for cooking
extra virgin olive oil, pepper, grated parmesan, salt.

Procedure

First, put the pasta in boiling salted water and chop the shallot separately and brown it in a saucepan with the oil.
After a few minutes, add the strawberries cut into small pieces and the cream, lower the heat and allow a kind of cream to form, also mashing the strawberries with a fork.
Spice with salt and pepper.
Drain the pasta al dente, preserving some of the cooking water, and stir it into the sauce, adding the Parmesan and a little water if necessary.
It can be served by adding more Parmesan and, for a crunchy note, some almond flakes.

Strawberry rice

This is another delicious dish perfect for those occasions when you want to make a good impression with an unusual dish.
It is prepared like a classic risotto by roasting rice (Arborio, Carnaroli or Vialone nano) in a skillet with chopped shallots or onions. Then mix with the white wine and slowly with the vegetable broth, adding the strawberries almost at the end of cooking.
Excellent cream with taleggio or gorgonzola, if you like strong contrasts.

Stuffed pasta

Lovers of fresh stuffed pasta, this idea is made for you: ravioli with ricotta and strawberries.
You can prepare them both in a salty version with an oil and parmesan vinaigrette, flavored with a mixture of aromatic herbs such as thyme and rosemary, as well as in a sweet version, perhaps with dark chocolate flakes. Or a white chocolate fondue.

Cold strawberry paste
