Scallion Noodles are probably the quickest, easiest and most delicious noodle dish you can make with pantry items and green onions.

They are super simple, but packed with flavor. On their own, they're vegan, but you can easily add protein and vegetables for a complete and balanced meal in a bowl of noodles.

What are chive noodles?

Originating in Shanghai, scallion noodles are a simple dish of scallion oil, noodles, soy sauce, and a touch of sweetness. Noodles can be served for breakfast, lunch, dinner, and as a snack.   • sugar – we are going to add a touch of sugar to bring out the umami of the soy sauces.

What noodles to use

You can use any kind of noodles for the scallion noodles. I have used instant ramen noodles, udon, ramen, rice noodles, egg noodles, even macaroni. Seriously, anything tastes amazing with this sauce. If you're not into noodles, this scallion sauce also tastes amazing with rice or protein!

Here I am using Chinese shanxi knife-cut brushed ribbon noodles or dao xiao mian (刀削面). They sell them in Asian supermarkets or you can buy them online. They are essentially wheat noodles with ruffled edges that have a wonderfully silky chewy texture that stands up well to sauce.

How to make chive noodles

  • heat chives and oil over low heat until the scallions brown and crisp and infuse the oil with the most amazing aromatic smells.
  • Scoop out the crispy chives and set them aside.
  • Add the soy sauce (two types!) and a touch of sugar in the oil.
  • cook your noodles and drain well.
  • throw the noodles with the oil and top with the crispy spring onion.
