Steak in a deep fryer?
Why make a steak in a deep fryer when you have a cast iron steak, seared backwards, or fire-roasted? While these are great ways to make a steak, a deep fryer can take your raw steaks to less raw (meaning perfectly cooked) in less than 10 minutes, with almost no cleaning and all that cleaning is done in a dishwasher. . After a long day at work, it sounds so much better to me than hand rubbing a cast iron skillet or preheating the grill.
How many steaks can you put in a deep fryer?
It largely depends on your fryer, but the optimal answer seems to be 2. In a pinch, with grates (more on this below) you can make 4 or even 6.
How to grab
Some people argue that a deep fryer cannot get a good crust on a steak. I say: look at the photo below. Air frying with its fan and high temperatures mimics a competent grill. The trick seems to be to bring the steak as close to the heating element as possible. For these photos, I used fryer racks to lift the steaks up to the heating element, and the resulting crust is really good for an effortless week-long steak.
Heck, this is better than some (admittedly terrible) restaurants where I wish I had a steak.
Air Fryer Grates
Air fryers are great, but rack air fryers are a game changer. The racks allow you to lift the steaks closer to the heating elements, cook more steaks at a time, and avoid any odd grill patterns from the fryer basket. You can use any rack that will stack and fit in your fryer. This is the one I use, but be sure to measure your fryer and make sure the bracket fits inside before purchasing.
Ideally, you want to bring your steak as close to the heating element as possible and leave an inch of air space to ensure nothing spontaneously burns. Don't leave it for the 7 minutes the steaks are cooking just in case.
Smoke
With that said, these are buttered steaks cooked within an inch of a 400 ° F heating element. Things are going to get smoky. I put our fryer under the hood fan and it worked. If you want a good crust, there is no way around the smoke. If you don't have a range hood fan, you may want to take out your deep fryer.

This is not a high value steak recipe. There are better ways to cook expensive steaks. This is more of a weeknight grocery store steak recipe.
That being said, I did try this with a more expensive tenderloin and a cheaper sirloin, for science. They were both around 1,25 '' thick and turned out to be perfect. The oily strip loin cap is made enough to be non-chewy and unappetizing, which is always a risk when medium strip loin is in short supply. The sirloin was still tender and juicy and not chewy or tasteless, which is always a risk with the sirloin.
Preheat your deep fryer
Preheating a deep fryer seems like an unnecessary step, but it's really helpful for a quick cook recipe like steak by reducing the time it takes to bring the deep fryer to temperature. I tossed a few oil-coated garlic cloves into the basket while I preheated (and cooked the steak) and they came out roasted and sticky.
