Cuttlefish-based appetizers

Planning a fish dinner, but tired of the usual seafood salad or 80's shrimp cocktail to open the meal? No problem here five cuttlefish starters that fits him well. Cuttlefish balls with guacamole

To prepare the cuttlefish, chop 400 g of cuttlefish with 80 g of grated cheese (pecorino and Parmesan or Parmesan, but also only Parmesan or Parmesan), 100 g of breadcrumbs, 2 eggs, salt, pepper, lemon and parsley. Let stand in the refrigerator for half an hour and form meatballs to fry or bake. Serve three or four on a bed of guacamole or - for the finger food version - put some sauce in the bottom of a shot glass and place a meatball on a skewer on a long skewer on top.

Cuttlefish appetizers: land-sea caprese

It doesn't take much to change up a classic like mozzarella and tomato, just add grilled cuttlefish. Serve this appetizer as turret, in alternation a slice of mozzarella, a slice of tomato and a layer of grilled cuttlefish. Season each ingredient with a little salt, pepper, oil, and basil. If you also want to add a touch of color, you can insert also a layer of grilled zucchini.
For the appetizer version, on the other hand, just make kebabs, maybe using cherry mozzarella and cherry tomatoes.

Gazpacho with crunchy cuttlefish

la gazpacho is a Cold soup made with tomatoes of Spanish origin. Make it (even ahead of time) and store in the fridge until ready to serve. Just before serving, season with cuttlefish with peas and spices, prepare it by squeezing the sauce as much as possible.

Fresh cuttlefish, orange and artichoke salad

Among the appetizers based on cuttlefish, you cannot miss a small one lighter, but no less greedy. Clean the squid, cut into small pieces and blanch for about 10 to 12 minutes. Waiting clean artichokes and cut them into thin slices with a mandolin, soaking them in water and lemon so as not to blacken them. Drain the cuttlefish and let it cool. Assemble the platter by mixing the cuttlefish with drained artichokes, peeled orange slices and black olives. Season with a vinaigrette made with oil, salt, pepper, and orange juice.
